The goat milk it is a source of proteins, fatty acids and a number of other essential nutrients.

A key difference between goat's and cow's milk is the proteins and fats. Another difference is the milking process: goat milk is mainly secreted by a process called "apocrine" and cow's milk is exclusively secreted by a process called "merocrine".

Digestion

Capricare® infant milk based on whole goat's milk, is made with the natural proteins of whole goat's milk which have the property of forming a porous clot in the infant's stomach.

Proteins

Milk contains caseins and whey proteins. There are 4 caseins: α1-casein, α2-casein, β-casein and κ-casein, as well as 2 major whey proteins: β-lactoglobulin and α-lactalbumin.

Goat's milk usually contains much less α1-casein and more β-casein than cow's milk.

Not all goat milks are the same. Goats of different breeds and with different genes produce very high levels of α1-casein similar to that of cows. The goat farmers who supply the goat milk for Capricare® infant formulas select goats based on the low levels of α1-casein in their milk.

Fats

The fats in milk are made up of about 30 different fatty acids. Goat milk contains twice the amount of medium chain fatty acids (C6:0 caproic acid, C8:0 caprylic acid and C10:0 capric acid) than cow's milk. Medium chain fatty acids (MCTs) are easier to digest than longer saturated fatty acids.

Milk secretion process

When milk is produced within the mammary gland of the breast it forms tiny droplets within the cells. Protein-containing microdroplets of milk are released from the mammary alveoli in two ways:

  • Merocrine secretion, where milk droplets fuse with the cell membrane to release the contents without losing other cell components.
  • Apocrine secretion, where the milk droplets are secreted from the cells along with some of the cell contents.

Goat's milk is mainly secreted by the apocrine secretory process, while cow's milk by the merocrine secretory process. Breast milk is mainly secreted by the apocrine secretory process.

The purpose of the Code is "to contribute to the provision of safe and adequate nutrition for infants, through the protection and promotion of breastfeeding, and by ensuring the correct use of breast milk substitutes, when necessary, based on adequate information and through appropriate promotion and distribution".
